Turkish coffee

Ingredients
- finely ground Turkish coffee
- cold water
- (optional) white sugar
You'll also need a Turkish chezve (preferably a copper one).
Directions
Gather your ingredients. Take a small coffee cup and for every person drinking, measure and pour one cup of cold water into your chezve.
Then, for each cup, add one teaspoon of coffee and one to three teaspoons of sugar (if you want). Stir your coffee with water before putting it on the stove and don't stir it anymore during cooking.
Then, put the chezve on a stove on medium heat. It's very important that it doesn't boil because it will turn bitter and you will lose the foam. Instead, ideally it should cook at a gentle medium heat for a while.
As it's cooking, look for foam forming at the top and scoop it carefully with a spoon and gently transfer it into clean cups for later. Repeat if necessary.
Once you see your coffee about to boil, remove it immediately from heat and slowly and carefully pour it into your cups so that you don't ruin the foam you previously scooped up.
