Cornbread muffins with chard

Ingredients
- 3 eggs
- 1 tsp salt
- whole bag of baking powder (10 g)
- ⅓ cup (around 50 ml) vegetable oil
- 1 cup (200 ml) yogurt
- 6 tbsp all-purpose flour
- 7 tbsp cornflour
- 150 g to 200 g any sort of salty salamura cheese*
- (optional) 200 g to 300 g Balkan blitva (chard)**
- (optional) kaymak for serving
*I use Pljevaljski cheese that is commonly sold in Montenegro. It has a distinct salty taste and slightly rubbery texture.
**Could be omitted if you do not like it, then you'll just make basic cornbread muffins.
Yields 12 muffins.
Directions
Mix your wet and dry ingredients together until you get a homogenous batter without lumps. Slice your cheese and greens into small pieces and mix them into batter.
Pour your batter into muffin molds and put into a preheated oven on 200 °C for 25 to 30 minutes or until you get a golden brown crust. Take out of the oven and molds and let cool slightly. Top with kaymak and serve.
