Zucchini pancakes — Oladyi

Oladyi are a sort of pancake that's commonly made in Russia and Ukraine.
Ingredients
- 2 medium-sized zucchinis
- 1 egg
- 1 tsp salt
- around 4 tbsp all-purpose flour
- sunflower oil for frying
- sour cream or smetana for serving
Directions
Peel and thinly grate your zucchinis. Then, squeeze them hard to squeeze most of the liquid out of them. This is very important because otherwise they will be too watery. Don't skip this step.
Add egg and salt and mix together. Start adding flour, but make sure to add just enough so the oladyi hold their shape after frying, but not much more because too much flour will make them less tasty. Also tip: Don't let you dough sit for too long or it will separate. If that happens just mix again.
Pour some sunflower oil onto a pan and wait for it to get hot. Then scoop some batter with a spoon, pour it onto the pan and shape it into an oval shape that's approximately 8 cm long.
Fry on medium high heat for a few minutes until golden brown, then flip and fry again until golden brown. Make sure your temperature is right so they get cooked through and aren't slimy inside, but still hot enough so they don't soak up excess oil.
Also try to use a non-stick pan and limit your oil amount. Simply drizzle a bit and let it get hot, then spread it on a pan with a spatula.
When they're ready, place them on a paper towel to remove excess oil. Wait for them to cool. Serve with smetana.
